It takes a few hours to sterilize the containers, prepare the produce, and then process the jars in the pressure cooker or canning pot. The safety and quality of this food is superior to other preservation methods with preserving more nutrients. Dehydration and vacuum sealing are both excellent choices as well, but there’s nothing quite as satisfying as opening the glass jars of the food you’ve grown and canned for a hearty meal when fresh produce is no longer available.
