Rachael Ray joined Dr. Oz on his show today and shared some of her best recipes and ideas for shopping and preparing healthy meals on a budget.

How do you afford what is healthy? Think and act. Don’t settle for buying processed foods. Did you see how easy that pasta dish with KALE was to make? Kale is not a superfood, but it is a great Green that supplies minerals, including calcium and chlorophyll to build your blood. But it would be my recommendation to swap the pasta for whole grains. Organic brown rice, millet, barley, quinoa, amaranth, and even whole oat groats make a wonderful base for kale, vegetables, and other ingredients that will cost you less than $5.00 to feed five people.

Rachel is still getting a lot of mileage from that recipe for penne with the vodka in the sauce! It seems to me that a marriage based upon one dish is not going to make a union solid, but that’s my opinion. A long-lasting healthy relationship is built upon more solid ground than a pasta dinner! But it does impress the man who doesn’t cook and is looking for a wife who can serve something tasty. There’s a place for that reasoning…

Rachel and Dr. Oz are newbies to the healthy food scene. When Dr. Oz asked Rachel what to do about the ‘gas’ from the beans, she basically responded by saying just to go ahead and fart. Does anyone on their staff know about kombu?

When you soak your beans and rinse them before you cook them, that makes a difference. Then as they come to a boil, you add a slice or two of kombu to the pot of beans and let the kombu work the magic of alchemy that results in less flatulence and better digestion. KOMBU – it’s a seaweed. It comes dried. It will rehydrate in the pot or you can let it soak in water before you add it to the beans or any other dish that you are preparing. It’s not expensive and it actually adds a lot of flavor to the beans, whole grains, or vegetable dish.

Shopping with coupons is not everyone’s cup of tea, but you can save quite a bit of cold, hard cash if you do use coupons or shop with the loss leaders from weekly advertising campaigns. It’s better yet to go to the websites of the manufacturers that you like and see what coupons they offer. I have used coupons for Chocolate Ice Cream made from soy milk for excellent savings. There are dozens of organic and natural food companies that will help you to save money on your purchases in addition to the local stores offering you savings with specials.

Buy Bulk! Rachel usually mentions this with greater emphasis and passion. Packaging cost money. When you buy in bulk, you can save a good percentage on items that belong in your pantry and Food Storage program anyway! Just organize your pantry to accommodate this shift in the way you shop. You’ll save money in the long run as prices on food continue to increase with the economic issues this nation is facing…
