Beans, beans, the magical food, the more you eat, the more you toot! The best food that you can eat for protection from free radicals and oxidation which causes DNA damage is beans! But they don’t have to become a musical instrument in your body! You can soak them overnight and then rinse them before cooking. You can add a stick of kombu to the boiling water and this changes the chemistry to reduce the gas that beans are known for.

When you are cooking your beans, use sea salt and then after they are fully cooked; add your spices and herbs. Onions, garlic, celery, cilantro, scallions, cayenne, oregano, thyme, paprika, tamari, or miso are good additions to flavor the beans. We love our aduki beans which are also known as red beans. We also prefer our black beans to pinto or other beans, but they are all good for you.

You should avoid canned beans and always make your bean dishes from dry beans. You should also pair your beans with a whole grain dish. Dr. Oz seemed genuinely surprised that beans are better than his favored berries when it comes to an abundance of antioxidant protection.     Personally, I prefer using superfoods like Goji Berries, supplements like SOD, and herbs for supplying my body with sufficient quantities of antioxidants, including whole foods like those that Dr. Oz chose to feature and I discussed on the Blog like beans, berries, and nuts.
