Mother’s Day: Magical Pasta and Amazing Italian Speciaty Foods
In honor of Mother’s Day this year, we want to draw your attention to the history that is her story in Italy and other regions of the Mediterranean.

My mother’s family grew grapes and made Red Wine in Tuscany for 200 years. The health benefits for her family was a history of happy hearts, robust laughter, natural beauty, and strong constitutions from drinking all that Red Wine along with whole foods from this region of Italy. My father’s family owned a General Store in Capistrano and sold great food that Italy is famous for…olive oil, artisan cheese, pasta, wine, and all the food items that compliment the Italian diet.
I was raised by my wonderful mom to enjoy home-made Italian dishes which were comprised of fresh produce, fresh seafood, fresh herbs…fresh ingredients in every instance. Our food was always fresh and fabulous. My mother went to the store every day to select the best available fruits and vegetables. She never selected meats from the case, but asked the butcher to give her specific cuts from the back. When we owned the Saratoga Inn, we always brought in the freshest seafood and other delicacies from around the country which was no easy feat in Wyoming. At least we did have great ranchers with healthy animals that were loved as well as fish from the North Platte River and wild game from the Snowy Range in the Rockies. My mother would prepare the ducks that my father and I hunted on the weekends along with the Rainbow Trout that made our river famous with people like Curt Gowdy.
My sweet mom loved making Pasta for the kids and their friends. Her meatballs were delightful and her marinara sauce was always made from scratch using the finest ingredients on the store shelves. I grew up loving garlic and other seasonings that added robust flavor to all of the food she lovingly prepared for us daily.
